Maxim’s in Paris – since 1893
Maxim’s in Paris, established in 1893, has long been synonymous with Parisian luxury, cultural history, and exquisite dining. Located near the Place de la Concorde, the legendary restaurant has drawn luminaries across generations, from Marcel Proust and Jean Cocteau to Edith Piaf and Maria Callas. With its art nouveau interiors featuring red velvet banquettes, mahogany panels, and ornate stained-glass windows, Maxim’s became not just a restaurant but a cultural icon—a place to see and be seen.
The restaurant initially thrived under various owners who expanded its reputation beyond just dining. By the early 20th century, under the guidance of owner Eugène Cornuché, Maxim’s embraced the art nouveau style, with décor celebrating the natural world and feminine beauty. Octave Vaudable took over in the 1930s, making Maxim’s a glamorous haunt for international aristocrats, artists, and movie stars. Its appeal as a timeless culinary destination reached new heights when the Vaudable family oversaw the expansion of its interiors and hospitality offerings, securing Maxim’s reputation on the global stage.
In the 1970s, fashion designer Pierre Cardin took ownership, injecting new energy into the venue. Under Cardin, Maxim’s saw a blend of old-world charm and contemporary flair, expanding with new locations worldwide. His influence also led to the creation of Maxim’s boutique and a more casual dining option, Maxim’s Minim’s, extending the brand’s reach. Cardin preserved the distinctive art nouveau decor, which lent the restaurant its unique charm, yet adapted its appeal to resonate with modern tastes. Despite a period of decline towards the late 20th century, Maxim’s retained its status as a prestigious institution.

Laurent de Gourcuff, head of Paris Society, envisions Maxim’s not only as a preserved historic site but as a revived venue for dining and celebration. With recent updates, including subtle art deco touches from Pierre Cardin’s collection, Maxim’s remains steeped in elegance while appealing to contemporary sensibilities. Though Maxim’s museum tours have ceased, the restaurant continues to embody the romance of Parisian dining, promising guests a timeless experience at the heart of Paris.
